The Balfour Kitchen & Bar continues the sustainability theme by sourcing ethically farmed meats and sustainable seafood, combining them with fresh local produce to create an award-winning Vietnamese fusion cuisine. The menu presents innovative dishes that reimagine traditional Vietnamese flavors with French and Asian influences.

The hotel boasts 17 luxury suites divided between two buildings. The main Queenslander building offers nine executive rooms with a European ambiance, while the art-deco Simla building houses eight one-bedroom suites adorned with intricate designs and a sleek aesthetic. All suites are spacious, bright, and feature luxurious bathrooms and modern amenities.
