Q: How did you first get into hospitality?
A:  I first started working in Hospo when I was 16 years old at a steak restaurant called Outlaws (Ned Kelly theme) in my home town of Mildura in country Victoria. My parents owned a butcher shop and sold meat to the man that owned the steak restaurant and he gave me the job.

 

Q: Where have you worked previous to The Defiant Duck?
A: I have worked many places prior to working at the The Duck. I was at Hatch & Co for 2 years, then Stokehouse at Southbank for 2 years, Novotel, The Treasury Casino and a combination of working at different hotels and restaurants in the Whitsundays, Daintree Rainforest, Ayers Rock, Kakadu, Melbourne, Tasmania and the Ski Fields at Perisher.

 

Q:  What is the biggest challenge you see in hospitality?
A: I find now as I grow older that the main challenge I face in my role is the management and recruitment of my staff.

 

Q: What do you love the most about working at the Duck?

A: The thing that I love the most about my job is my guests……. Oh and of course my boss Simon!!!  I love meeting new people and learning about their lives and personalities. I love networking with people and ensuring that they have an enjoyable and memorable experience every single time!!! There is rarely a dull moment at The Duck and we are constantly learning and growing as a team and a business everyday!!!
