The Defiant Duck opened their new Coffee/Juice window in January this year delivering some amazing coffee, smoothies, juices and of course their delicious food. Serving up breakfast and lunch 5 days a week from 6am.

1. What is the biggest challenges of running the window?
The challenges vary each day. Some days it’s the pleasure of ensuring that we continue to deliver the personalised service we are valued for. We pride ourselves on prompt service as we understand everyones time is important. At other times it can be the co-ordination of staff and making sure we have adequate team members to cover our service. The new juice bar which we introduced in December was quite challenging as we weren’t prepared for the popularity of the new menu.
2. What do you love most about working at The Defiant Duck?
I love working with our whole team at The Defiant Duck especially Simon the General Manager and Co-Owner, Hayley function and restaurant manager and Head Chef Shaun. It’s always fun to come to work. I also really value the personal relationships I have built over time with our customers. Really I just LOVE the Duck.

1. How many coffees does the window make on average in a week?
Ok well……………. that’s a tough question……..HEAPS? We predominantly cater for the employee’s of the BOQ building and there are at least 1800 of them so………… you do the math!
Currently we are going through 50 kilos of beans a week and growing we are open from Monday through to Friday 6am to 3pm.
2. What is your favourite drink from the new Juice Bar?
I would have to say by far my favourite smoothie would be the Peanut Butter Cup, its like a slice of heaven with every sip. Imagine a Reeses’ cup, and then imagine that in smoothie form, containing superfoods and fruits that add to the texture and taste of this famous Duck delight.
